World's Best and Easy Apple Scones

One of the most in-demand food that I regularly bake for the family is my simple and delectable Apple Scones.  The reason is because it is my wife's favorite "goto" snack and she needs the sustenance and energy for teaching the young leaders of Hong Kong.

Recipe:

Apples - 2 or more
Wheat Flour - 2 cups
Baking Powder - 3 tsp
Salt - 1/2 tsp
Unsalted butter - 2/3 cup
Sugar - 3/4 cup
Non-Fat Milk - 150 ml
Egg - 1

Steps:

1.  Peel and cut/dice your apples.
2.  Place flour, baking powder and salt into a bowl.
3.  Mashed in the butter (sliced the butter and used a softened one for easy mixing)
4.  Add the sugar, milk and the sliced apples.  Mix everything properly.
5.  Place the mixture to your baking tray lined with aluminum foil or baking paper.
6.  Brush with a beaten egg (to create the lovely shimmer on top). 
7.  Preheat the oven to 200c.  Once ready, cook for 18 minutes.

Crispy Eggplant Delight - Healthy Snack Food for the family

I have been writing about my cooking and baking experience for a month now.  Next in line, is my favorite vegetable - the eggplant.  And, I call this simply "Crispy Eggplant Delight" as it makes my youngest daughter very happy with unlimited request to make more (cooked this at least three times or more in a week).  She actually likened this snack dish to chips but much healthier version.

Here is the finish product.






It's a very simple fried dish but packs a lot of goodness because of my secret weapon - Mc Cormick Season's Fry Coating Mix.  Takes me less than 10 minutes to prepare and cook the dish.

Recipe:

Eggplant - 1 pc
Egg - 1 pc
Mc Cormick Season's Fry Coating Mix - 1/2 pack
Extra Virgin Olive Oil (for frying)

1.  Slice the eggplant into round chips.
2.  Beat the eggs and place on a flat plate.
3.  Place the Mc Cormick coating mix powder in another plate.

Now, let's do an assembly line - pick, dip, coat and fry:.

4.  Dip the sliced eggplant and bathe it in the egg mixture.  Make sure to let the egg stick to both sides.
5.  Next, dip the eggplant to the coating mixture.  Shake a bit of the excess powder.
6.  Fry the eggplant in low heat.
7.  Serve and Enjoy.

World's Best and Easiest Banana Cake

What's best to eat and easy to prepare for a lazy weekend....

My banana cake special from my mom's easy recipe of goodies.  The cinnamon though is my improvisation - can't resist the lovely color and the smell it adds to every bite.

125 grams Unsalted butter
3/4 cup sugar
1 teaspoon vanilla
1 egg
2 ripe bananas
1 1/2 cups self-raising flour
2 teaspoon cinnamon powder
1/4 cup low fat high calcium milk
